姜启兴,男,山东龙口人,博士,教授,博士生导师。食品科学与工程副系主任,江苏现代农业(大宗鱼类)产业技术体系质量安全与加工创新团队岗位专家,全国食品加工机械标准化技术委员会(SAC/TC551)委员,国家农产品加工产业科技创新联盟-预制菜专业委员会委员,江苏省第二批“苏北发展特聘专家”,江苏省“双创计划”科技副总,五台县沙棘产业发展技术顾问,2019年入选南通市通州区“510人才计划”,2020年入选南通市“江海英才计划”。
主要从事食品加工与保藏及综合利用方面的研究,主要研究方向为水产品加工、果蔬加工、肉制品加工,先后主持国家“863计划”、国家重点研发计划等国家级项目3项、省部级项目10多项,主持企业委托项目50多项。相关科研成果申请发明专利80多项,授权50多项,先后获教育部高等学校科技进步一等奖1项、部省级科技进步二、三等奖5项,发表科研论文100多篇,其中SCI/EI论文50多篇。

教学方面主要承担本科生专业课《食品工艺学》、《食品工厂机械与设备》、《食品工艺学实验》等课程的教学工作,主讲的《食品工艺学》课程先后获国家精品课程、国家精品资源共享课、江苏省在线开放课程、国家级线上线下混合式一流课程。作为主译完成了译著《食品工艺学实验指导》,参与编写了《食品工艺学》、《肉制品加工原理与技术》、《食品科学导论》等多本教材及教学参考书。相关成果获江苏省教学成果二等奖1项,中国轻工业联合会科技进步三等奖(教材)1项,江南大学教学成果一等奖3项,二等奖1项。
每年指导博士研究生1-2名,硕士研究生3名左右。
